No Salt Pizza Sauce

  • A no salt recipe for pizza sauce and/or Italian sauce for sodium-restricted diets, like my son, who is on dialysis.

  • Serves: 8

Ingredients

1 - 1lb can Hunt's all natural no-salt crushed tomatoes (other brands also available) 
3 - tablespoons dried Italian herbs 
1 - cup fresh chopped herbs: basil, oregano, thyme, rosemary, tarragon (in order of amount, mostly basil) 
3 - medium slices red onion, minced 
6 - cloves garlic, minced 
1 - tbsp Anise seed (or fennel or both!) 
Olive oil

Directions

Cook garlic and onion in olive oil until onions are a bit tender (5-8 minutes) on medium heat.

Add all other ingredients and simmer until you like the taste (30 minutes or so - if longer, add fresh herbs towards the end).

This will seem a bit sweet without all the added salt, but it's pretty darn good!

If you want to cut the sweetness, add a cap full of white vinegar.

Serving size depends on how saucy you like your pizza.
